21 - Kiwi Brand cleaver knife with an eight inch blade and a wooden handle.

The 21's profile is somewhere between a traditional chef's knife and a Chinese cleaver.  The blade is 1mm thick and the cutting edge has a double bevel, so this knife has no problem cutting through vegetables and meat. The wide blade is 61mm and has a good surface area for picking up ingredients that have been chopped or sliced.  Unlike a traditional Chinese cleaver, the 21 has a pointed tip.

The blade is made from Japanese high carbon martensitic stainless steel (SUS420J2) which has been hardened and tempered for optimal sharpness. This knife has a razor sharp, double bevelled cutting edge and it has a high quality hardwood handle which is secured with brass rivets.

As the handle wood is untreated, it will benefit from the occasional application of a food grade oil to maintain the health of the wood, avoiding shrinkage and keeping the handle looking like new.  See the "knife care" tab for more details.

Having brought a Kiwi brand knife home from Thailand over 30 years ago I always buy them now, they are good quality , light weight , sharp and easy to sharpen

The perfect alternative to the santoku!

Sharp out of the box & even sharper after light honing, its shape and balance is as good or better than other knives costing over five times as much. The handle on the Kom-Kom version is better, but that's a very minor niggle. Highly recommended.
